Cajun/Creole food is the most inventive cuisine in America. Cajun food combines African, Native American, and French culinary traditions into a brand new thing.

The amount of new recipes that have come out of New Orleans and Louisiana is astounding when you think about it. Gumbo, Jambalaya, Etouffe, Po-Boys, Shrimp Rockefeller, Blackened Fish, not to mention their drink creations like the Hurricane.

New Orleans is a special city when it comes to food. People come to visit just to eat the food. Along with that food comes a great American synthesis of French, African and Native American cultures. And along with those cultures comes the great musical traditions of New Orleans which are still vibrant to this day - from Jazz to blues to rock and funk. New Orleans is the music city of America.
