The reason French food has so many sauces is that it was created to deal with rotten food. If you put a lot of sauce
onto bad food, you can't taste what you're eating. What the world knows as French traditional food was all created to deal with poverty, scarcity and starvation.

In the 1800s in France they were starving a lot and had horrible instability. Napoleon destroyed France
